Bread and weight management: the story of Dr Pape and our protein bread

A German doctor specialising in nutrition and obesity wanted his patients not to have to give up bread. That is how the recipe for The Original Protein Bread was born.

Bread and weight management: the story of Dr Pape and our protein bread

For years, the German doctor Detlef Pape (1954-2017), a specialist in nutrition and obesity, studied the habits and foods linked to excess weight. Drawing on that experience, he developed a method that he set out in several books and which, in his own words, was simply an easy way to organise meals.

Dr Pape’s method

His approach was to eat three meals a day with about five hours between them. He also distributed foods in a specific way: more carbohydrates at breakfast, more protein at dinner and a combination of both at lunch. He also stressed the importance of rest and getting enough sleep as part of a healthy lifestyle.

A bread so you don’t have to give up bread

Many of his patients found it hard to give up bread. So Dr Pape set out to create one designed for people following a careful diet. He developed it together with Theodor Rietmann, a German company specialising in bakery premixes. The recipe is high in protein and very low in carbohydrates: the protein comes mainly from soya and lupin, with a small proportion of wheat, and it contains soya semolina, seeds and fibre.

That recipe is the origin of The Original Protein Bread, which Bocado launched in Spain in 2015 and which paved the way for our entire range of functional foods.

Protein, fibre and fullness

No food makes you lose weight on its own. Weight depends on your overall diet and lifestyle. What can help is choosing foods that keep you full. A bread with 28 g of protein and 15 g of fibre per 100 g, and only 5 g of carbohydrate, is a way to keep enjoying bread while you look after your diet.

And it tastes like bread

What people value most when they try it is that it tastes like a good seeded loaf, nothing like the idea of a “diet bread”. It works just as well for breakfast, in a sandwich or for a light dinner.
